Once again, Fisher has fashioned a quintessential Cabernet Sauvignon. The superb 2014 Fisher Mountain Estate Cabernet Sauvignon offers gorgeous dark fruit flavors in the form of black cherry, wild blackberry, and plum along with hints of cocoa and finely ground spices. Bold, flavorful, and incredibly textured, the 2014 Fisher Mountain Estate Cabernet Sauvignon exemplifies the greatness of Fisher’s high elevation mountain fruit. Savory and deeply concentrated, this wine exudes richness as well as depth and precision. We would be hard-pressed to find a better California Cabernet Sauvignon at this level. Obviously, we are not alone in our summation as Antonio Galloni’s 93 point rating in Vinous will attest. For optimal enjoyment, we suggest opening and decanting the 2014 Fisher Mountain Estate Cabernet Sauvignon at least thirty minutes before serving at cool room temperature (60°-62° F). Already profound, this classic Bordeaux style of Cabernet Sauvignon will continue to improve and mature gracefully for up to a decade. Enjoy!
The bold-flavored, concentrated 2014 Fisher Mountain Estate Cabernet Sauvignon will elevate almost any meat, pasta, vegetable, or cheese dish to a new level, but whether the dish is simple or complex, Fisher’s Cabernet Sauvignons deserve the finest, freshest ingredients. Prime Filet Mignon in a puff pastry filled with fresh mushrooms, or Seared Wagyu Flank Steak prepared with a honey-lavender glaze, sautéed kale, and butternut squash au gratin make the grade in the company of Fisher’s 2014 Mountain Estate Cabernet Sauvignon. Braised Lamb Shanks provide another tried and true accompaniment. An equally compelling, heart-healthy option calls for Coffee Crusted Bison Filets. A Mushroom and Wild Boar Sausage Ravioli, or a Grilled Herb-rubbed Pork Tenderloin with a tart cherry sauce in the company of roasted root vegetables and smoked butternut squash is another perennial favorite pairing with Fisher’s Mountain Estate Cabernet Sauvignon. Hand-crafted dark chocolates make a wonderful companion to this wine, too, without having to spend hours in the kitchen. And as an added bonus, with chocolate as an accompaniment, no wine lovers have to settle for just one of life’s great pleasures. Bon Appétit!
"We are small in size but great in scope with both mountain and valley estate vineyards. Our wines reflect the great care we have given these vineyards; those who drink the wines and those who write about the wines, sing their praise, and we are grateful." - Fred J. Fisher, Proprietor
Founded in 1973 by Fred and Juelle Fisher, Fisher Vineyards has been for decades quietly fashioning an incredible array of highly allocated Cabernet Sauvignons from its Napa Valley Estate and Spring Mountain Estate in Sonoma County, albeit in miniscule quantities. Fisher, like many of California’s top Cabernet producers, is truly a family affair. Fred and Juelle’s three children, Whitney, Robert and Cameron, have come on board to assure the flow of world-class wines from Fisher Vineyards. We are pleased to offer to our club members a taste of one of California’s finest and most sought after Cabernets.
The Fishers take a two pronged approach in crafting their award-winning wines: one highlights the truly unique characteristics of single vineyard sites, while the other emphasizes the art of blending small complementary lots of various estate vineyards and varietals in order to create the most balanced, harmonious, and complex wines, as with Fisher’s 2014 Mountain Estate Sonoma County Cabernet Sauvignon (this month’s feature).
In addition to fashioning outstanding Cabernet Sauvignon and Bordeaux blends, Fisher Vineyards produces limited quantities of excellent Chardonnay and Syrah. We trust you will enjoy Fisher’s hand-crafted Mountain Estate Cabernet Sauvignon as much as we do.
