Fisher’s superb 2012 Mountain Estate Cabernet Sauvignon not only exemplifies the greatness of Fisher’s high elevation mountain fruit, it offers all fortunate enough to acquire a bottle a taste of one of California’s quintessential Meritage or Bordeaux blends. The 2012 Fisher Mountain Estate Cabernet Sauvignon earned 93 points from Antonio Galloni at Vinous. A deeply saturated purple robe first greets the eye and is followed by a bouquet that gloriously wafts from the glass. A deep, dense wine, the 2012 Fisher Mountain Estate Cabernet Sauvignon offers plenty of savory scents and flavors to gratify the senses. Rich blackberry, cassis, wood smoke, tobacco, incense and wild herb flavors well up to greet the nose and grace the palate. Concentrated, yet smooth and rich, Fisher’s Mountain Estate Cabernet Sauvignon possesses concentration, depth, and precision with just the right amount of tannin and verve to offer a long, lingering, expressive finish. For optimal enjoyment, we suggest opening and decanting the 2012 Fisher Mountain Estate Cabernet Sauvignon at least thirty minutes before serving at cool room temperature (60°-64° F). Already profound, this classic Bordeaux style of Cabernet Sauvignon will continue to mature gracefully for many years. Anticipated Maturity: 2017-2025.

The complex, concentrated 2012 Fisher Mountain Estate Cabernet Sauvignon elevates almost any meat, pasta, vegetable, or cheese dish to a new level. It can be a simple or complex preparation, but for our tastes this Cabernet from Fisher deserves the finest, freshest ingredients. Prime Filet Mignon in a puff pastry filled with fresh mushrooms or Seared Wagyu Flank Steak prepared with a honey-lavender glaze, sautéed kale, and butternut squash au gratin make wonderful accompaniments to Fisher’s Mountain Estate Cabernet Sauvignon. Braised Lamb Shanks provide another tried and true accompaniment. An equally compelling, heart-healthy option calls for Coffee Crusted Bison Filets. A Mushroom and Wild Boar Sausage Ravioli or a Grilled Herb-rubbed Pork Tenderloin with a tart cherry sauce in the company of roasted root vegetables and smoked butternut squash is sure to please, too. A delectable Four Bean Chili provides a tasty vegetarian option with this wine. We are pleased to offer to our club members a taste of one of California’s finest and most sought after Cabernets.

The Fishers take a two prong approach in crafting their award-winning wines: one highlights the truly unique characteristics of single vineyard sites, while the other emphasizes the art of blending small complementary lots of various estate vineyards and varietals in order to create the most balanced, harmonious, and complex wines, as in Fisher’s 2012 Mountain Estate Sonoma County Cabernet Sauvignon (this month’s feature).
